Vegetable and Meat Pasta

We nailed dinner last night. It was one of those nights where I desperately wanted to crack a box of Mac and cheese and call it a night but out of thin air (well, my fridge and cupboard) this delicious pasta dish pretty much asked to be made. 

While many of you, I'm sure, make your pasta sauce from scratch I am a sauce from the bottle gal. However, I love to doctor it up! What better way to improve upon a jar of sauce than to add freshly sauteed veggies?! 

How do you know what to add? I see what i have and if it sounds like I would put it on pizza (which is almost anything!) We just might chop it up and throw it in a pan with some extra virgin olive oil and minced garlic. Last night's fridge pull was REALLY good and really simple. Here's what I did:

Cook pasta (I used elbows)

Sauté found veggies including but not limited to garlic, yellow onion, zucchini and add jar of pasta sauce to pan. Mix.

Add cooked ground meat seasoned with salt and pepper. 

Add pasta to your plate. Spoon sauce onto pasta. 

Add parmesan cheese to the top and black olives for more vegetables (although I think it is technically a fruit!). 

Eat!

My 6 year old son said this is the best dinner we've had all week. Not to be outdone my 4 year old daughter responded that it was the best dinner she had ever eaten! There you have it...the best ever.
